Tequila Soaked Margarita Cupcakes

These festive margarita cupcakes are filled with the most delicious and easy lime curd and frosted with tequila buttercream. Enjoy as a celebratory treat or to satisfy your margarita craving.

Start with my standard Golden Cupcakes recipe. This cake is my go to cake for any cupcake that calls for a moist, buttery yellow cake. To make these cupcakes, bake a batch of Golden Cupcakes and brush the tops with good quality tequila shortly after you take them out of the oven.

Golden Cupcakes

Versatile yellow butter cake.
Servings: 30

Ingredients

  • 3 1/2 cups cake flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 cup unsalted butter at room temperature or softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla
  • 2 cups sour cream

Instructions

  • Preheat oven to 350 degrees.
  • Sift together flour, baking powder, baking soda and salt.
  • Beat together butter and sugar in large mixing bowl fitted with a paddle attachment until light and fluffy.
  • Add eggs, one at a time, beating well after each addition, then beat in vanilla.
  • Add half the flour mixture and mix on low speed until just blended, then add sour cream, mixing until just combined. Add remaining flour mixture and mix at low speed until batter is smooth.
  • Fill paper baking cups about 2/3 full and bake 15-17 minutes until toothpick comes out clean. Take care to not overbake.
  • Cook completely before frosting.

For a desirable kick to you cupcakes, brush a bit of tequila onto the top of the cupcakes when they come out of the oven. Once completely cooled, core the cupcakes (I always use a melon baller). Fill with tasty Fresh Lime Curd.

Fresh Lime Curd

Creamy, thick and tangy fresh lime curd.
Servings: 2 cups

Equipment

  • Use a non-reactive saucepansuch as stainless steel or enamel. Don't us a reactive saucepan like aluminum or cast iron or your curd might change color or taste funny.

Ingredients

  • 5 large egg yolks
  • 2 large eggs
  • 1 cup granulated sugar
  • 3/4 cup fresh squeezed lime juice
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/8 teaspoon sea salt
  • 4 teaspoons lime zest

Instructions

  • Use a 2 or 3 quart non-reactive saucepan.
  • Place the egg yolks, whole eggs and sugar in the saucepan and whisk until it is well blended. Whisk in the lime juice and salt.
  • Cook the mixture over medium heat, whisking constantly until the mixture is thickened enough to coat the back of a spoon.
  • Remove from heat and whisk in the butter.
  • Pour/press lime curd through a metal strainer into bowl.
  • Stir lime zest gently into the curd.
  • Cover the surface of the curd with plastic wrap onto the surface of the curd. Place the curd in the refrigerator for at least 2 hours.

Notes

You can store this curd in the refrigerator for up to 2 weeks.

Tequila Lime Frosting

Ingredients

  • 1 cup unsalted bnutter, softened to room temperature
  • 4 cups confectioners' sugar
  • 3 tablespoons tequila
  • 1 teaspoon vanilla extract
  • 2 teaspoons lime extract
  • 2-3 tablespoons heavy whipping cream

Instructions

  • In a large mixer fitted with the whisk attachment, whisk the butter at high speed until completely smooth and creamy, about 3 minutes.
  • Add the confectioners' sugar gradually at low speed, then increase to high speed once blended. Add whipping cream and whisk at high speed until fluffy. Add tequila, vanilla and lime falvoring and whisk to incorporate.

Notes

You can substitute 1 tablespoon of lime oil for the lime extract but don’t use lime juice because the flavor is not strong enough.
