Cake Balls

Today we are lucky to receive a lesson from Christy’s Confections on how to make cake balls:
What are cake balls? They resemble cake pops but they are not just cake. Cake balls are a delicious blend of cake and frosting mixed together and then dipped in chocolate. If you have never had one you are definitely missing out. The first time I had one I was at a birthday party and couldn’t stop eating them. It was rather embarrassing because I must have eaten 10 but they were so good.

The first step is to make a cake. The cake can be made from scratch or you can use any kind of boxed cake mix. Follow the directions on the box. When the cake is done, let it cool for about 30 minutes.

After the cake is cooled completely, wash hands thoroughly or use gloves. Break it up into tiny crumbs. It’s best to not have any big clumps.

When you have finished breaking the cake into crumbs, add ⅓ of the can of frosting or about ½ cup if you measure it out. Mix the frosting into the cake until there is no trace of frosting showing.

Shape the dough into round balls about an inch and half wide. When you finish shaping all the cake into balls, place them in the freezer for 30 minutes. If you are not planning on using them for a while, I have frozen them up to 1 month and they are still fresh and delicious. Make sure the container or plastic bag you use is freezer safe.

You can use any kind of melting chocolate to dip the cake balls in. If the chocolate you use is a solid piece, shave it into finer pieces to allow the chocolate to melt quicker and more evenly. Melt the chocolate for 30 seconds in a microwave and then stir. If it needs more time to melt, add additional time in 5 second increments. You do not want to burn the chocolate because you cannot use it if you do it will not harden properly.

Dip the cake ball into the melted chocolate and make sure it is coated evenly. Place it on wax paper until it cools. You can add sprinkles at this time but do it rather quickly because the chocolate tends to harden pretty fast.

Voilà!
